BaKed potato soup

Hey y’all! I hope you’re staying safe, warm, and enjoying this sweater weather. Here in Southern California it’s not too cold during the day but at night it’s been quite chilly. Chilly weather means I get to make one of my favorite things-soups and stews! My favorite part about making soups and stews is that there are so many different ingredients I can use and foods I’ve never tried before that I can add to it to make a tasty dish that will warm me up! Today I am sharing a simple, hearty, delicious recipe-baked potato soup. Everything you love about a baked potato in soup form. It’s very cost effective so it won’t break the bank, and you’ll be full and satisfied. I hope you enjoy this meal as much as I do! Happy Holidays!

Ingredients:

5-6 Russet Potatoes

2 Cups Chicken Broth

1/2 Cup Milk

6 Slices of Bacon

Mild Cheddar Cheese

Green Onions

Sour Cream

  1. Start by peeling your potatoes and washing them off. If you like the peel from the potato you can keep them on just be sure to clean them really good. I like to soak mine in baking soda for about 10 minutes and then scrubbing the peel until all of the dirt is cleared.
    2. Add chicken broth, and milk to a pot.
    3. Cut potatoes into pieces or you can place them in the pot whole depending on the size of your pot. Cutting them into pieces before adding them to the chicken broth and milk mixture will shorten cooking time.
    4. Put pot on medium-low heat, cover pot and check on potatoes every 5 minutes to ensure they do not stick to the bottom of the pot. After about 15 minutes use your potato masher to begin mashing the potatoes.

    5. If the potatoes have become too thick add more milk or chicken broth to your desired texture. Whisk in cheese and butter if desired. Use a fork if there are chunks of potatoes to tear apart. I enjoy the added texture but if you want a creamier soup use a ricer or cheese grater for the potatoes versus placing them into broth and milk mixture in pieces or whole.

    6. Fry bacon in a pan until they are crispy.

    7. Once soup is done break pieces of bacon into the soup and stir in.

    8. Garnish with cheese, bacon bits, and sour cream as desired.
