Plant Based Fried Rice
Hello everyone I hope you all are having a great week so far. Today’s recipe is my plant based spin on a classic comfort food-fried rice. For this fried rice I ditch the eggs, and add tofu instead, if you’re not a fan of tofu or can not have it just omit it from the recipe. I also use liquid aminos, which is a soy sauce alternative that is gluten free and has slightly less sodium than soy sauce. For the veggies I use peas, sweet corn, and diced carrots. You can add whichever vegetables you like as well of course! This recipe is very simple, fairly cost effective, and is great if you are serving a lot of people. Ingredients
-2 Cups White Rice
-4 Cups Water
-Ground Cumin
-Olive or Vegetable Oil
-Firm Tofu
-Sweet Corn
-Green Peas
-Diced Carrots
-Liquid Aminos
-Agave or Honey
-Garlic Salt
-Oregano
-Basil
-White Onion
Rinse rice and pour two cups into a rice cooker or a pot along with four cups of water.
Place tofu into a bowl after draining water out and mash with a fork. Season tofu with ground cumin, garlic salt, and any other seasoning of choice. Mash tofu on the size of however big or small you’d like your pieces to be.
Wash and dice white onion, and carrots and set aside.
Wash and shuck corn and set aside. Wash and peel green peas and set aside. You can also use frozen veggies for this recipe as well.
Place olive oil in small pan on medium-low heat and add in white onions once the pan is hot. Stir occasionally until onions are translucent.
Add in tofu and mix until onions are incorporated. Add in the rest of the vegetables after this is done.
When rice is finished add oil to a medium-large pan and fry rice until it is slightly brown or a texture to your liking. Add in liquid aminos, honey or agave, garlic salt, basil, and oregano to taste.
Mix in tofu and vegetables to rice and season to taste.
